When Tony and Kristi Chase opened Daufuskie Island Distillery in 2014, it wasn’t part of a carefully planned retirement. The couple had moved to the island for a quieter pace of life, but Tony quickly realized that lounging on the beach every day wasn’t his style. A longtime idea of starting a rum company resurfaced, but instead of the mainland, Tony envisioned something more fitting: “Rum is an island drink — let’s make it here on Daufuskie!”
Kristi knew better than to doubt him, saying, “When Tony gets an idea, you can either get on board or step aside — because he’s going for it.” With her support and his determination, what started as a dream became a reality. Through hard work and dedication, the Daufuskie Island Distillery grew from a single-focus rum company to a celebrated producer of rum, bourbon, and vodka.
The Chases’ passion and commitment continue to shine through in every bottle, capturing the spirit of the island they call home.
Jeremey Quinn didn’t set out to join a distillery, but fate had other plans. With a background in exercise physiology, Jeremey was simply helping Tony move equipment one day when a casual conversation about the need for an associate distiller sparked his curiosity. A lifelong enthusiast of science and math, the idea resonated. By the end of the day, Jeremey returned to discuss the opportunity further, and the rest is history.
Today, Jeremey’s curiosity, precision, and passion have made him an integral part of the distillery team!
Barb Barrett has been a friendly face at the distillery since 2018, warmly welcoming every customer who walks through our door. With decades of retail experience both on Daufuskie and beyond, Barb’s journey to the island began nearly 20 years ago when a Daufuskie businessman invited her to work for him. Thankfully, she took the leap and never looked back. Known for her calm demeanor and exceptional care for every customer, Barb is an invaluable part of our team and a cornerstone of the Daufuskie Island Distillery experience.
Jake Shafer joined the team in 2024, bringing a wealth of culinary experience — especially from the food truck scene. His journey began in California, where he discovered his passion for cooking. The Low Country soon called him back, and he continued his career in Charleston.
When the pandemic hit in 2020, Jake moved to Daufuskie, where he shared his talents with two local establishments before seizing the opportunity to join our team. His love for southern cooking and dedication to the craft make him a valued member of our culinary family.
