DAUFUSKIE DARK RUM

2 oz Daufuskie Island Dark Rum
0.5 oz honey syrup
0.25 oz fresh lemon juice
2 dashes Angostura bitters
1 dash aromatic bitters
1 wide lemon peel
Combine dark rum, honey syrup, lemon juice and both bitters in a mixing glass filled with ice. Stir slowly and deliberately for 25–30 seconds until well chilled. Strain into a chilled rocks glass over a single large ice cube. Hold the lemon peel skin-side down over the glass and give it a firm twist to express the oils across the surface. Run the peel around the rim and drop it in.
Tasting Notes
Smooth, aromatic and slightly sweet with a long finish. The dark rum carries the honey beautifully without either overpowering the other.
Serve
Cold, in a rocks glass over a large ice cube.
