2 oz Lythgoe Bourbon, Pauline’s Victory
1 ripe peach, cut into wedges
0.75 oz fresh lime juice
0.5 oz honey syrup
4 to 5 fresh mint leaves
Large ice cube or crushed ice
Peach slice and mint sprig for garnish
Muddle the peach wedges and mint leaves gently in the bottom of a shaker. Add bourbon, lime juice and honey syrup. Fill with ice and shake vigorously for 10–12 seconds. Double strain through a fine-mesh strainer into a rocks glass over a large ice cube or crushed ice. Garnish with a fresh peach slice and mint sprig.
Tasting Notes
Bright, fruity and refreshing with a clean bourbon finish. The peach and honey feel distinctly Southern without being overly sweet.
Serve
Cold, in a rocks glass.
